When meat is exposed to consistent, indirect heat over many hours, the connective tissue, primarily collagen, breaks down gradually into gelatin. That process is what gives properly smoked brisket its texture: firm enough to slice cleanly, tender enough to yield without effort.

The smoke itself does more than add flavor. It reacts with the myoglobin in the meat to form a smoke ring, that distinct pink layer just beneath the bark.
